While yes, the bone fist is a fist weapon, and with the use of the Vanquishers Seal, your fists are technically fist weapons as well, these cannot be dual wielded together. I.e, you can't dual wield a bone fist and a bare fist.
To power-stance the Bone Fist, one will need 27 Strength and 45 Dexterity. Due to the extremely-low base damage and amazing scaling, after being fully-upgraded, the Bone Fist is still viable even when completely broken. It upgrades with twinkling titanite, up to +5. At +5, the scaling becomes S/A.

The Power Stance is a player ability in Dark Souls II. When dual wielding two weapons of similar classes, attempting to two-hand the left-hand weapon (hold Y/Triangle by default), the player instead activates Power Stance, which makes left-hand attacks swing with both weapons instead.
